New Kitchen

Will be having a new kitchen end of March, having to have the damp proofing done so old kitchen being ripped out.
Any suggestion/tips for things to have or avoid that would help Mum she has early stage vascular dementia and lives with me.
Which would be safer electric or gas hob? She leaves it alone if I'm not there but thinking if/when dementia gets worse.
I'm having single taps not mixer and with the easy turn handles. And straight handles on the doors.
