I know that my wife and I should stay in as per advice, but it is hard. Do you think it is acceptable to drive to the sea side, picnic in the car - not get out of the car dont interact with anyone at all just to break the day up?

I would take the opportunity whilst you can, it won't be long before all none essential travel is banned.
Why not stick closer to home, just in case you have car problems?

The current advice is to stay 2m away from others so that’s still acceptable at the moment. As @Alex54 suggests it’s probably best not to go too far from home.
