I used a variation of
@DesperateofDevon s idea - I used onion, no mushrooms, but I found a red pepper going wrinkly at the back of the fridge, so that went in, plus a few chopped green beans, some Thai green curry sauce, a tin of coconut milk and finally the last of the roast chicken. All eaten with rice. My goodness it was nice.
I boil up the chicken carcus too
@Palerider . I used to use the stock to make risotto, but I dont have time to stand and stir it anymore, so it usually gets used as the basis of soup or in a stew.
I have a variation on easy pot pies. OH has to have a gluten free diet, I havent mastered the art of GF pastry (it all falls apart when I make it) and the stuff you can buy tastes like cardboard, so I make a savoury crumble with lots of herbs in the crumble mix. I have a cast iron frying pan, so I make the pie mixture in there (frying where necessary), add a lot of stock/gravy, sprinkle the crumble mix in a thin layer over the top so it soaks up the liquid and put the whole lot in the oven to cook the crumble.
I must admit though that there are days when I cannot cook and some days (like today) when OH has had a seizure and I dont know when or even if he will be eating today. I have a stack of ready meals for when that happens, so if OH gets up and announces that hes hungry I can just stick one in the microwave and get it down him before he falls asleep again.
