My Mum's Easy Fruit Cake

    This Cake is very easy to make & keeps well in a Cake Box for about 7 Days !

    12 oz Mixed Dried Fruit

    4 oz Caster Sugar

    4oz Maragrine

    1 Medium Egg

    1/ 4 Pint Cold Water

    8oz S R Flour

    Method

    * Heat Oven to 150 c , 300 f or Gas Mark 2

    * Grease a 7 inch Cake Tin

    * Put all fruit , fat , water & sugar in a Pan , simmer slowly with the lid on
    for 20 Mins

    * Cool well , beat egg & add to fruit , stir in flour well

    * Pour into Tin & bake for 1 1/ 2 Hours ( Approx )

    Mum uses a Loaf Tin rather than a round tin , its best to leave for a few days & then eat ! . Using a Loaf Tin means it "Slices Nicely "

    Hello Every Body , Sorry for got to tell you how to "Test" when the Cake is done ! ...... tho am sure most of you know any how ! ! ! ( But Oven Temps / Cooking Times do vary etc from Oven to Oven ! ) The way I "Test " it is to use a old " Clean Knitting Needle ! " . " Push " it well into the Cake & if it comes out "Clean " its done ! . Gess any sharp Kitchen tool would do ! Meat Fork etc, etc
